Vegan Stewed Peas (Beans)

A cozy classic, made plant-based and full of flavor.
This is the kind of dish that feels like a warm hug on a rainy day. Rich, hearty, and rooted in tradition—but fully vegan. Creamy coconut milk, fresh herbs, tender veggies, and those beloved spinners (dumplings) all come together in a one-pot wonder that’s deeply satisfying.
Ingredients:

3–4 cans red kidney beans, drained

2 heads garlic, smashed

2 stalks scallion (green onion)

A handful of fresh thyme

A small handful of crushed pimento (allspice) berries

1 scotch bonnet or habanero pepper (whole)

2 medium carrots, sliced
-
2 small Irish potatoes (or sweet potatoes), diced

1 cup flour + water (for spinners/dumplings)

1 cup coconut milk
-
1 tsp garlic powder
-
2 tsp Z Eats All-Purpose Seasoning or your favorite all-purpose seasoning blend.

1 tsp salt (or to taste)

A pinch of black pepper

Water (just enough to cover contents during cooking)

Instructions:

Start your base:
Add drained kidney beans to a large pot with enough water to cover them. Add garlic, scallion, thyme, crushed pimento, and your whole pepper. Bring to a boil over medium heat. -
Simmer & infuse:
Let simmer for about 15 minutes to let all those fresh flavors come together. -
Add carrots:
Stir in your sliced carrots and continue cooking. If your water starts to reduce too quickly during this process, don’t hesitate to add more—but only a little at a time, just enough to cover what's in the pot. Keep an eye on it so everything stays cozy and submerged, but not swimming. -
Make spinners:
Mix your flour with a little water to form a firm dough. Pinch and roll into skinny dumplings (spinners), then drop them into the pot. -
Add potatoes:
Stir in your diced potatoes and continue to add small amounts of water only if needed to keep everything lightly covered while it cooks through. -
Pour in coconut milk:
After 10 minutes or once the carrots, potatoes, and spinners begin to soften, stir in your coconut milk. -
Season it right:
Add garlic powder, ZEats All-Purpose Seasoning, salt, and black pepper. Stir and let everything simmer for another 10–15 minutes. By now, the liquid should begin transforming into that signature thick stew. -
Final simmer:
Once the potatoes and dumplings are cooked and the stew has thickened to your liking, turn off the heat. Remove the pepper if you’re not into extra heat.
To Serve:
